  1. In warm milk, add yeast, salt, sugar, kefir at room temperature and a glass of flour. Mix everything well and leave for 10-15 minutes in a warm place.
  2. As soon as the mass foams, add sour cream, egg and mix.
  3. Gradually add flour and begin to knead the dough right in the saucepan.
  4. Pour vegetable oil into the palm of your hand and mix into the dough - repeat the procedure three times. You should have a very soft elastic dough.
  5. We tighten the top of the pan with the dough with cling film and leave it in a warm place for an hour and a half.
  6. During this time, we make a broach 2 times - carefully stretch the dough and turn it over, do not wrinkle much!
  7. Our dough for cakes is ready! While the dough was coming up, we did not sit idly by, but prepared, accordingly, the filling.
  8. To do this, we twist the meat through a meat grinder, finely chop the onion and garlic.
  9. Add finely chopped hot pepper, salt, Caucasian spices and mix everything.
  10. We mix sour cream into the almost ready minced meat - it will become even tastier, softer and juicier!
  11. We divide the dough into five parts (usually an odd number of cakes are baked on holidays) and roll out a small thick cake from each.
  12. In the center we put minced meat in a slide.
  13. We collect the dough and pinch it so that we get a ball with minced meat inside.
  14. Sprinkle the cutting board heavily with flour, turn the ball over and begin to carefully roll it out to a thickness of 1 cm, constantly turning it to one side or the other.

  16. We lay a piece of foil on a baking sheet, on which we lay out the cakes (my fifth did not fit, I baked it later).
  17. We bake in a preheated oven to 230 degrees for 20 minutes.
  18. Then we take out the baking sheet, grease the cakes with butter, set the form with water down, and again - into the oven, for 5-7 minutes. Focus on your oven! As soon as the top of the cakes is browned, we take out the cakes, generously grease with butter and stack them in a pile.

According to tradition, they lay three cakes on top of each other and cut everything together into sectors.

Ossetian cakes, they are also amazing Ossetian pies, can be prepared not only according to an authentic recipe on water, but also in a more rich version - on milk or kefir.

Ossetian pies for festive feasts are always baked in odd quantities and served in the same quantity. In the even version, pies are baked only for sad and mourning dates.

The dough recipe is based on 3 pies. To knead the dough for Ossetian cakes on kefir, you will need the following ingredients.

In a bowl, combine kefir, water, salt and sugar. Stir.

Sift flour and add yeast. My yeast combines with flour. Knead soft and viscous dough.

The dough should not be hammered with flour, it should remain viscous. In the process of kneading, pour in vegetable oil. Why make soft dough? So that in the future, when molding, do not use a rolling pin. Ossetian cakes-pies are never rolled out with a rolling pin, the dough is distributed only with palms and fingers. And for this you need the dough to be soft. Cover the dough and leave in a warm place to rise.

Meanwhile, prepare the filling. This will require the following products. I prepared pies with different fillings, but in the recipe I indicate the number of ingredients for three pies.

Combine fatty minced meat with finely chopped onion, crushed garlic, salt, pepper and coriander or fresh chopped cilantro. Pour boiled water for juiciness, and if there is, then broth. Knead the minced meat so that it becomes homogeneous and juicy.

Dump the risen dough onto a table that has been generously sprinkled with flour. The dough is quite soft and still sticky. Using flour, knead it on the table and divide into three equal parts.

Form each part into a flat cake, stretching it on the table. Place the filling in the center in the form of a slide.

Gather the edges of the dough to the center, connect them, sprinkle with flour. Slightly flatten the ball and turn over. Then, gently stretching, form a cake. Usually, a pair of round boards is used for this, and they turn the cake over with their help. I don’t have such boards, so the easiest way is to transfer the ball to a baking sheet or form, it’s already formed there to the end. The oven must be heated to 200 degrees.

It is necessary to ensure that the Ossetian cake on kefir turns out to be very thin and the filling is distributed evenly without tearing the cake. Make a hole in the center for steam to escape. The cake does not need to be lubricated. Put to bake in the oven for 15-20 minutes.

  • 6 After an hour, the dough had almost tripled in size. Put it back on the table and knead. Divide the dough into 4 parts.

  • 6 g of soda;
  • 1.5 cups of kefir;
